Chocolate is often vilified in diet culture, but as a herbalist (did you know that cocoa beans were originally used as an herbal remedy?) and a chocolate connoisseur it is one of my missions in life to spread the joy of tasty chocolate treats!
Chocolate is full of magnesium which is why women often crave it during certain phases of their cycle. And, while I don't recommend using it as a magnesium supplement, I believe that indulging in a chocolatey treat is a great way to bring a little sparkle into your daily life.
The recipe that I am sharing today is chock full of that delicious chocolaty taste, while also staying low in sugar and providing a healthy source of protein and fat to keep your blood sugar stable. A bonus is that almonds are also a good source of magnesium, making this a treat that is not only decadent, but nourishing, as all good food should be!
Dark Chocolate Almond Butter Cup Recipe
8-10 Servings
1 Cup Dark Chocolate Chips (Lily's is a good low-sugar brand)
1 Cup Almond Butter (I like Simple Truth brand)
Pinch of salt (optional, but recommended if your almond butter is salt-free)
Combine almond butter with dark chocolate and melt in the microwave in small increments, stirring in between 15-20 second increments until fully melted. Line muffin pan with cupcake liners. Scoop one spoonful into cupcake liners. Smooth mixture as much as possible, and freeze for 20 minutes. Slowly peel off cupcake liners and enjoy your delicious, two-ingredient almond butter cups! Store leftovers in the refrigerator.
These are also super easy to play with adding additional ingredients! Some add-in ideas:
- A sprinkle of Cinnamon and Cayenne for a lightly spicy kick. Also great for the circulatory system!
- Maca powder for added hormone balancing power
- Dried berries for an antioxidant boost
