Citrus Salad Dressings for Spring

Nothing screams spring like lemons, and crisp salads! When you put these ingredients together you get a nutritional powerhouse, as the citrus helps to unlock many of the vitamins and other nutrients in your leafy greens. Add some olive oil and you have a simple, no-fuss salad dressing!


I want to kick it up a notch today, and give you two lemony salad dressings that were made for spring!



Garlic Lemon Sunflower Seed Dressing


1 cup sunflower seeds, soaked overnight then drained


1/2 cup of water


Juice of 1 lemon


1 garlic clove, minced


1/4 cup extra virgin olive oil


1 scallion


sea salt & black pepper to taste



Combine all ingredients in a high speed blender and blend until smooth. Store refrigerated in an airtight container for 7-10 days.



Honey Basil Lemon Dressing


Juice of 4 lemons


2 Tbsp honey


1 clove garlic, minced


1 tsp dried basil


sea salt & black pepper to taste



Combine ingredients in a small bowl and mix with a fork. Store in a refrigerated airtight container for 7-10 days.
