Blueberry Sorbet With Mint

It is HOT here! Of course, being 6 months pregnant doesn't help matters a whole lot, but I think everyone would still agree with me!

 

And the worst part is, that its not just hot, it's humid! Its the kind of heat where your clothes stick to you and your hair falls flat just walking from the car to the front door. It is this kind of weather that I crave anything icy and cold and creamy.

 

Of course, its easy enough to get a snow-cone, or ice cream at any corner stand, but its not always worth the sugar crash, or the tummy ache, or the broken diet guilt, just for a moment of sweet, cold relief. So today I am coming to the rescue with a completely guilt-free treat that is not only super fast to make, but also full of energizing, blood-sugar stabilizing ingredients!

 

 

 

 

Blueberry Sorbet With Mint

serves 3-4

 

  • 3 cups frozen blueberries

  • 1 cup coconut water

  • 4-5 mint leaves

 

Place all ingredients in a high-speed blender and blend until well incorporated. Garnish with extra blueberries and mint leaves if desired.
